The PICKLED RAMP: There is some debate on which chef brought pickled ramps from its out in the woods roots to NYC restaurants first. Hint: The answer is either Colicchio or Kunz circa 90-92Either way, pickled ramps are one of my favorite preparations of a great Spring ingredient. We will pickle about 1000 pounds this year #spring #chefs #history
